What are some things you find curious?
I mean the adding a bay leaf thing. Does one wimpy dried bay leaf REALLY do anything to enhance the flavor of my soups and stews? It almost seems like a reflex and honestly don't notice any thing different with or without it!

Have to agree... I've never noticed a difference with a bay leaf or without.

i think there are scams surrounding the spice business. i'm pretty sure Martha Stewart is a proponent of tossing herbs/spices after 6 months. i always rub anything leafy/dried in my palm before adding to whatever i'm cooking. as long as i get a nice aroma, no reason to toss it.
i'm pro-bay. my grandmother taught me my cooking basics and a bay leaf or 2 was absolutely mandatory in a pot of soup or stew.

I have a friend, actually two that are Chefs, they always keep an eye on the spices and replace them regularly.

I have heard that some olive oils are being faked too. I mean it's disappointing to know you can't really trust things anymore.

I always buy spices in small quantities. The Spice House sell them in Envelopes that ship free. Perfect size and price.

We have so many spices and seasonings that we need to build a whole section of the pantry just for them!

My son brings home all sorts of seasoning blends and spice blends from work (at the meat market). We have some pretty unique things. Shameless plug: denvermeatmarket.com/about-sams-meatsMy son is the second one in from the right, wielding the big knife

I have to say my new favorite is the one 🦍MAXX>ⓤ suggested. Tajin, I love it. I'm also using mushroom powder in a lot of stuff I cook. My friend at the Eagle's Healing Nest grows mushrooms of all kinds and makes it.

One I enjoy on chicken is a lemon&rosemary citrus sea salt and use an organic lime salt on sone seafoods...Neither are very salty and you don't need to use much to really make the flavors come out...

Mike brought home some Citrus Salt to use for Mojo-Habañero wings for Superbowl Sunday. He used a bit too much, and it was super, puckery tangy. Great flavor, though.
