What is something you just can't seem to make right?
For me it's rice. I know that it should be simple but it never turns out right for me. Either too sticky or not done.. I even tried a rice cooker and burned it.

Meatloaf. No matter what recipe I use, my meatloaf sucks.

I think part of my problem is that I really do not care for meatloaf.

I was not a big fan of it either. But here is what i do. I dice up celery, carrots and onion and saute them in a pan until soft. You could add garlic if you choose as well. Then I puree it in my food processor and let it cool. I then add it to my ground meat along with the normal stuff like egg, bread crumbs, salt, pepper, onion and garlic powder, etc. This has made a HUGE difference in how savory and yummy my meatloaf is. It is probably the one thing that i make better than my mom did.

My DIL uses the sauteed mirepoix in hers. She doesn't puree it, though. It's okay. I mean I will eat it and enjoy it, but I won't go out of my way for meatloaf.

Its a bit extra work so I understand but it is really worth it I'm going to try it You don't have to completely cool it. Just enough so it isn't cooking your hamburger when you add it. I add that and mush it in then add my other stuff to get it the way I want it
