We all have some that when you don't know what to make or don't feel like being in the kitchen all day. What are they?

First and foremost for me is Mexican. Either tacos and enchiladas (both can be prepped way ahead of time) and Walking tacos.
Walking Tacos I love because I can put it all together in the morning and cook it at night.
Ground beef browned and seasoned with taco seasoning One can of Rotel's tomatoes and green chilies One can of Black Beans (drained) One can of Corn (optional and also drained) 4 or more Corn or Flour Tortillas depending on the size of your dish Mexican cheese, all you want. Doritos or Freetos crushe Lettuce, tomato and avacado
Brown the ground beef with taco seasoning then dump in the beans, Rotels's and corn if using it (I don't). Lightly oil a casserole dish then line it with tortillas pushing them up to line the sides of the dish as well. One light layer of cheese on the tortillas, then dump in the ground beef mixture. Top with more cheese.
When ready to bake crush Doritos or Freetos on top and bake at 350 until hot and bubbly. I cover it and remove the foil at the end so the Doritos don't burn. Once done add shredded lettuce, diced tomatoes and any other toppings you like.

Some type of pork chop dish. I love pork chops, and would prepare them often and many different ways.

For a quick meal, hamburgers is easy. I keep ground beef portioned in 1lb packs and flattened. I can pull those out and the package thaws pretty quickly. We usually buy 10lbs of ground beef at a time then I portion it out into 1lb packes and freeze. Easy meal.
Also, I have chicken on hand, easy to bake some chicken breasts for a quick meal with some instant mashed and a jar of gravy.(yeah, sometimes i use gravy in a jar, dont' judge! lol)
Spaghetti is quick and easy and I will toss in some of my ground beef. Pair with a quick salad and some garlic bread.
Always have steaks on hand. Can do one of those and slice and pair with rice or steak wraps.
I don't really use recipes for quick cooking. I wing it with the above.
