Noodles and Tomoodles.
A pound of cooked elbow macaroni with a can of tomato juice poured in.
And lots of pepper.
I think I have eaten just about everything on that list.

Pasta + is the Italian peasant's way of stretching meals. Fast, cheap and easy to prepare - boil any type of small pasta like elbows, shells or ditalini, heat a can of tomato sauce (DelMonte, Hunts, Contadina even a store brand) add some minced garlic and/or minced onions sauteed in oil then add a can of chick peas or cannelini beans. Or - short cut to pasta with lentils - mix small pasta with a can of lentil soup.
Mac & cheese.
Sautee veggies with garlic and oil (I only use olive oil) and add to spaghetti or other pasta.
Of course there's always pasta with marinara or tomato sauce with seasoned sauteed ground beef, mushrooms or meatballs.
Pasta or egg noodles with butter and parmesan cheese if you like.
Mashed potato mound on a plate, make a depression (a well) in the center with a ladle then pour some sauteed ground beef and brown gravy and enjoy a tasty little volcano of yummyness.
Meatloaf is a good way to use inexpensive ground beef.
Repurpose leftovers - make or buy pie crusts, fill them with cut up veggies, meat and gravy and turn last night's meal, or even Thanksgiving leftovers into a delicious pot pie.
Cube and fry some potatoes, add beaten eggs and whatever seasoning you like, let cook in a pan, put a plate over the top of the frying pan and flip, then cook until both sides are done and you have a nice potato & egg fritatta. Pare it with a salad and you have a tasty, inexpensive meal.
Buy discounted packaged cake that's past its sell by date from outlet store. Warm it in the oven and serve. I had a boyfriend years ago whose Mom was very frugal. She bought cakes that weren't stale, but not the freshest either and yet they tasted bakery fresh when she served them warm from the oven.

Another way to save is by trying to find a store brand soup that is often half the price of the name brand. They are usually just as good. I always try to find a cheap alternative. Of course, if the taste is noticeably different, get what you like. There are all kinds of cheap meals you can make. You can make a meal from a bowl of rice. I have made a meal of cottage cheese and fruit or just a salad. Many can foods are inexpensive like corned beef hash or those Chef Boyardee meals in a can. You can get those cans of roast beef and put that on rice. I try to get by on a tight budget to counter the horrible inflation, so I eat cheap meals a lot. Another thing I do is put things together that do not traditionally go together if that is what is available. So long as you like the food, what difference does it make?

Its not that diffucult to feed a family healthy inexpensive meals.
Pasta e fagioli, or pasta and beans, is a quick and easy, inexpensive, nutritious and delicious meal that the entire family will enjoy. Children especially love it. Don’t let its simplicity fool you; this is an authentic Italian recipe for pasta and beans.

Chili, serve with rice... Ground beef, onions and kidney beans mixed with diced tomatoes, tomato puree, and chili powder.

I have had people argue with me to the teeth that they cannot "afford" to eat healthy food. I said a bag of carrots is a lot cheaper than a bag of doritos! And on and on. One can eat healthy if they CHOOSE too or not. And yes, fresh veggies can be expensive so buy frozen. I use a lot of frozen veg because I dont' use fresh fast enough. I usually buy a 10lb bag of rice and lasts a long time.
