@fuzzems, excellent & informative article!
for me, it's solid, white/light in olive oil.
fresh tuna is more and more common in the seafood case. i'm slowly working my way toward a touch of pink in center. it totally well-done... it's as dry as dust. still tasty, but needs some sort of sauce/dressing.

I think you get what you pay for. I do eat tuna once in a while. But I much prefer salmon.

There is an important note to make about line caught and pole caught tuna. Pole caught being much more ethical and sustainable.
