I can't eat much meat anymore but I've discovered so many great recipes. Tofu, chickpeas, black beans etc. If you have a good one you want to share I would love to see them. I have everything ordered for this recipe next week. Miso garlic baked tofu 1 block firm tofu 2 tablespoons miso paste 2 tablespoons soy sauce 2 tablespoons maple syrup 2 tablespoons rice vinegar 3 cloves of garlic, minced 1 teaspoon sesame oil 1 teaspoon cornstarch 2 tablespoons water Instructions: Preheat the oven to 400°F (204°C). Line a baking sheet with parchment paper. Drain the tofu and cut into small cubes. In a small bowl, whisk together the miso paste, soy sauce, maple syrup, rice vinegar, garlic, sesame oil, cornstarch, and water. Place the tofu cubes on the prepared baking sheet. Pour the miso mixture over the tofu, making sure that each piece is well coated. Bake for 25 minutes or until the tofu is crispy and golden brown. Mushroom & Tofu Stir-Fry
Ingredients 4 tablespoons peanut oil or canola oil, divided
1 pound mixed mushrooms, sliced
1 medium red bell pepper, diced
1 bunch scallions, trimmed and cut into 2-inch pieces
1 tablespoon grated fresh ginger
1 large clove garlic, grated
1 (8 ounce) container baked tofu or smoked tofu, diced
3 tablespoons oyster sauce or vegetarian oyster sauce
Directions Heat 2 tablespoons oil in a large flat-bottom wok or cast-iron skillet over high heat. Add mushrooms and bell pepper; cook, stirring occasionally, until soft, about 4 minutes. Stir in scallions, ginger and garlic; cook for 30 seconds more. Transfer the vegetables to a bowl.
Add the remaining 2 tablespoons oil and tofu to the pan. Cook, turning once, until browned, 3 to 4 minutes. Stir in the vegetables and oyster sauce. Cook, stirring, until hot, about 1 minute.
Tips Tip: Sweet, salty oyster sauce is made from, well, oysters, along with salt, sugar and sometimes soy sauce. Substitute vegetarian oyster or stir-fry sauce, if desired, which uses mushrooms instead of oysters.

My lady's brother is 61 and all he eats is fish. The guy looks like 40 Fish has a lot of omega 3 fats and is very good for you. When I do eat meat it's fowl or fish. I eat red meat about 2 times a month now. When I start craving it I know it's time.
