More Cheese, Please: Farmers Are Squeezing Cows for Fattier Milk Butterfat levels in cows’ milk are above record highs set during World War II Americans are eating more cheese and butter. That has dairy farmers scrambling to get their cows to produce fattier milk. The efforts include using different cow breeds and feed mixes, and making sure animals are comfortable and don’t get too hot. The result is that the average amount of butterfat in milk produced by U.S. dairy herds has climbed past 4% and above the previous record set during World War II. Just five years ago, dairy farmer Melvin Medeiros said his herd consisted entirely of Holsteins, the black-and-white spotted animals often shown in TV commercials. Now about 70% are brown Jersey cows, which are smaller but produce a fattier milk. “We wanted to graduate to a more efficient cow,” said Medeiros, who operates a 500-acre dairy farm in California’s Fresno County. The switch reflects the resurgence of dairy products like cheese and butter as low-fat diets have faded in popularity. Cheese consumption is at an all-time high, with Americans eating an average of 42 pounds a year in 2022, according to the most recent data available from the U.S. Department of Agriculture. I'm addicted to cheese & butter And the problem with that is what??? lol The fat content. I am supposed to not touch cheese or butter or any dairy products actually due to having high cholesterol. I like the taste of dairy, but have to acknowledge the trans fats.

My doctor has told me to avoid all dairy products. Due to my high cholesterol.
I thought it was due to the 'bad' fats in that kind of food?
I know a lot of processed foods contain a big amount of trans fat too. What do they put in processed food to make so laden with it?
I guess margarine is not a good additive in these kind of processed foods.

Hydrogenated oils. Like coconut oil and palm oil. And deep-fried foods.
All animal foods contain cholesterol. It is the saturated fats that can affect your cholesterol. That is what is found in dairy and cheese.

I am at the point of quitting many kinds of foods. In fact I have already done that in many cases. I hardly ever eat cheese, but find it hard to avoid milk, although I have cut down on it. My next big challenge it cutting out cream in coffee. I avoid margarine and rarely eat things like cookies, cakes and other processed foods. I no longer eat ice-cream. I don't eat home make deserts either.
I am not a big meat eater and don't eat things like fried chips or fried anything anymore.
I do feel healthier for it. But I have to admit, I do slip at times, as I have a sweet tooth.
of course I'd love to eat anything and everything, but then I can kiss any progress I made health wise goodbye.
