No measurements, I just eyeball it. I used a pint of Ricotta cheese, 1 large egg, about a cup of chopped fresh spinach, 1/2 cup parmesan and cup of mozzarella and pasta sauce. I do NOT cook the shells first, it is so much easier to fill them. I use a pastry bag for that. Add a bit more sauce on the bottom of the pan and on top of the shells. I let it sit in the fridge for a few hours before cooking. That and the extra sauce will cook the shells when you bake it. 350 for about 30 minutes less if it is hot and bubbly.

looks great! stuffed shells are one of those dishes that I call "big" food... a little difficult to make just 1-2 servings... freezes well though takes up too much freezer space.
I usually give shells a brief minute (max) in boiling water to give them a tiny bit of flexibility.
I use pretty much the same cheese mixture... no measuring, for sure. when I make lasagna, I do a rolled up version.... individual servings. now I WANT shells or lasagna!
