Yesterday's dinner was at the curbside Brothy noodles, and meat. The broth made of coconut & bean paste. And a large bottle of beer.

I've done so much cooking today... and I finished off with making cookies. I think it's because I'm feeling guilty about going away by myself for a while!

I made a really nice three bean chili with loads of celery, onions, garlic, and a few carrots may have snuck in there. The family had additional ground beef, cheese, and chips with theirs. I've over-indulged over the holidays so had mine with some oven-fried onion rings. Mmm mmm very tasty.

Hm not really a recipe, I just used a skillet and a little olive oil to sweat a medium onion, several stalks of celery, some carrot sticks chopped fine. When they were getting soft, I added in several cloves of garlic because they were on the small side. When everything was soft, just throw it in the crock pot with a small bag (I think 8 oz? Whatever the normal small bag the grocery sells) of chili beans - dry pinto, light kidney, dark red kidney - and cover about an inch and a half with water. Add in two of the small cans of tomato paste, and then I made an herb mix containing about half teaspoon each roasted onion powder, roasted garlic, roasted red pepper, crushed red pepper flake, chili powder, dill, paprika. Pinch or so of rosemary, savory, thyme, basil, teaspoon of powdered buttermilk. After cooking a while, it seemed to need a half teaspoon cumin, some chopped jalapeno rings, a good crack of pepper, some extra chili powder, a little cinnamon, a sprinkle of curry powder. I really just make it to taste. When I brown hamburger for a dish, I always brown double, spread the extra on a tray to freeze, and bag it up in the freezer. Thus I had hamburger cooked with onion and garlic which I re-heated in the microwave and placed in the bowls before dishing up for my family. If no one is doing a vegetarian thing in your house, you could just brown it with the onion, celery, carrot, and garlic and add it in at the start. I'd probably use beef broth or stock in place of water in that case, too. You can leave out some of the jalapenos if you really don't like spicy heat, but this is a very mild chili. One of my family isn't big on hot stuff. Another is so poured some of my home made picante and a pile of chili pepper rings like used for nachos on top of theirs.
