Have a lot of potatoes? Dice and blanch them in boiling water for a minute or so. Place on wax paper lined sheets and freeze. Once completely frozen put into bags the proportion of our meals without waste. You can do the same with avocadoes. Peel and slice (don't blanch obviously). Lay them on a sheet pan with wax paper and freeze. The put in resealable bags for use in Guacamole and other dishes. do the avocados need any kind of acid... like lemon juice? No not if you freeze them right away

No at least mine didn't. They are good for guacamole and sauces. The won't stay as firm as a fresh avocado

i'm gonna give this a try! bought 4 avocados at Aldi yesterday. none were ripe/soft enough to eat... borderline today. I have a FoodSaver (vac sealer thingies), so will try that. I'm really not much of a fan of "freezer" bags.
